They are. And the good thing is that the people who aren't fanatical about Sabbat can just ignore the releases.

If the label doesn't want stock sitting around for years that's the solution. Look at professorblack. He pressed 1000 copies of his Sentenced 7". In a few years it will be wanted and in ten years even more. Yet he still didn't press 2000, because he would have overstocks for years.
The market for those Sabbat live records is maybe 200 buyers maximum, but if you press 200 you will have stocks for years. In the long run you will sell them all, but in the short run you're just loosing money.

I'd just get pissed if a band I was a die hard fan of released
around 40 (!) live albums in a few years time, as with Sabbat. It just seems
like the label(s) are messing with you collectors out there.

There couldn't be any band I'd buy a few dozen live vinyls or split EPs. I own 2 Sabbat vinyls in total. I don't own any die hard of any band either. To me it's the same concept as stamp or comic collecting. Well, to be fair at least those live LPs contain music to listen too.

I buy Die Hards for extra material as in music, like Goatlord or whatever. Patches are a bonus and I get them where I can. I'm not an obsessive 'Die Hard' collector though.
