Right now, the bands I listen and enjoy the most from Spain are Atrabilis, Negativa, Sartegos, Balmog and Suspiral.

Apart from the already mentioned:
LEGION, killer Thrash/Speed Metal. Lethal Liberty, the first full lenght, is a cult euro classic according to me, anthemic and powerful riffs and refrains.
FUCK OFF, Thrash Metal. One of the first Thrash Metal bands in Spain with some more US touch.
ELFFOR: Black Metal in the vein of Summoning. Very long discography and because of that we have some low points among the records, nonetheless a worthy band for all in search of atmospheric oriented BM with a strong Summoning vibe.
REINCARNATION: Death Metal in the vein of the first Pyrexia record. Dunno about the reunion stuff but the Seed Of Hate EP and the full lenght, Void, are top notch stuff.
NECROPHILIAC: Old gory Death Metal. Chaopula - Citadel Of Mirrors is another gem from early 90's, Rotten DM with some Thrash reminiscences.

Some BM stuff, apart from the great PROCLAMATION, TEITANBLOOD or SACRIFICIO could be NAZGUL, URUK-HAI, SPELLCRAFT, DEATH SQUADRON (more DM) but not so worthy to hold your breath for them.
Regarding new stuff I prefer IRON CURTAIN among the others.

I would like to add Korgüll the Exterminator (black thrash), Bloodoline (made a split with a side project of Vindsval of Blut aus Nord), Daemonlord and Wormed (sci-fi tech Death, possibly the most "famous" band from the country with good quality)

I have not digged enough into Galician and Catalan scenes, but the Basque scene has a quality above average.

Also, if you like noise music, Esplendor Geométrico are one of the pioneers of the genre.

I will try to list some bands not yet mentioned.

MACHETAZO (best grind/death!!!!!)
MISTY GREY (true doom with female vocals)
MOHO (great sludge, they were massive on stage)
ORTHODOX (awesome doom/jazz/heavy/whatever)
DEMONIC WAR (ug black metal, disbanded. All demos were great, specially 2nd. Awesome band.)
ATONEMENT (with members of demonic war, punk/thrash/black)
BARÓN ROJO (great heavy metal, 2nd and 3rd album are memorable)
PERCUTOR (speed metal from Madrid, try their EP on Discos MeCagoEnDios)

not metal:

PACO DE LUCÍA (best guitar ever, if you're into fusion try Solo quiero caminar or Live one summer night. If you prefer normal flamenco go to Fuente y Caudal)
CAMARÓN DE LA ISLA (best flamenco singer, try solo or with Paco. La leyenda del tiempo doesn't feature Paco but is a really important album, though)
LEÑO (first album, hard rock a la black sabbath / rush)


NOT RECOMMENDED:
Héroes del Silencio (crappy pretentious stuff)
Obús, Goliath, Crom and other subpar 80s heavy metal. Most were SHIT so better stick to Barón Rojo.
All the black metal from the 90s/2000s except PRIMIGENIUM, which is actually good. Rest are mostly just average (when not total shit)

Would dispute Crom as crap - 'steel for an age' is rough power metal at it's finest, but each to their own. Obus mostly crap but they have their moments.
